Guide to the Ellis Confectionary Collection
Scope and Content
Recipe book used by Henry Ellis, dated 1859, but no doubt added to over the years. The book includes many handwritten recipes, as well as clipped instructions for making confections.
Also included are copies of Henry Ellis’ 1907 obituary, a 1937 article about the closing of the business, a 1958 article about the Ellis home, and an 1883 letter written on the business’ letterhead (copied from H70-38)

Biographical / Historical
Henry H. Ellis was born in Derbyshire, England in 1838. He came to the United States in 1848. Ellis came to Cheyenne in 1868, after residing in Denver since 1865. For nearly forty years he operated a bakery and confectionery business in Cheyenne. After Henry’s death in 1907, the business was run by his son, Lem H. Ellis, who sold it in 1920 to W.R. Sheneman. Sheneman sold the business property in 1937, and the purchasers turned it into a restaurant, ending what was at the time the oldest business in Cheyenne
